BACK TO THE ANCESTRAL DIET FOR HEALTH CARE

Formerly in the Inca empire had no roads, no cars, they built dirt roads, men walked with their animals. They were engaged in agriculture, animal husbandry, metallurgy and construction. Their diet was based on the consumption of quinoa, amaranth, corn, guinea pig, alpaca, llama, fish, tuna among other foods, they had no processed food products or used food preservatives, or artificial colors. They made lots of walking. To this ancient diet is now known as the ancestral diet. The ancestral diet is one that our ancestors ate and allowed better performance from your body, probably had good health. Our ancestors may not have suffered from many diseases as now, the suffering, such as osteoporosis, obesity, stress, atherosclerosis, cardiovascular disease, diabetes, cancer, food allergies, neurological, rheumatological, alzheimer also not found much mortality rate as we currently have because of these diseases.Currently, it has changed our ancestral diet for another. Now we eat processed foods that have antioxidants, preservatives and artificial colors and foods. We eat few fruits, vegetables. We carbonated drinks, high-calorie drinks, we also take milk, and many high-calorie products. Do not do exercises. All this is probably the cause of the suffering of chronic diseases mentioned above. This change was due to the acculturation imposed on us other eating patterns and turn away from our ancestral diet. When I was doing research work in all regions of Peru asking people about their eating habits, it was found that those who maintained their ancestral diet such as Andean villagers shows that do not develop the disease at present, if they have the that if away from their ancestral diet. There are to date Andean populations that still have the habit of feeding on the ancestral diet, such as your breakfast consists of corn and cheese, your nickname or barley soup, then they will be plowing their farmland walking (is as exercise), lunch and dinner consists of soup and second are stews that are seasoned with herbs from the place. No smoke, your 8 hours sleep and get up early, take a life without stress, all these factors help to longevity and do not suffer from the diseases of this century. But when these Andean villagers away from their ancestral diet and eat fried foods, soft drinks, grilled chicken, kebabs, sausages among others and do not exercise, sleep little and you notice that they develop diseases listed above.Within ancestral foods my ancestors ate (the Incas) were:Quinoa (Chenopodium quinoa) is a food that has 16-23% protein and carbohydrates. Among the amino acids have to lysine, arginine, histidine, methionine and cysteine. Has iron, calcium, phosphorus. The year 2013 has been declared as the International Year of Quinoa by the General Assembly of the United Nations in recognition of ancestral practices that have preserved Andean quinoa as food for present and future generations.Amaranth (Amaranthus caudatus), its seeds contain 13 to 18% protein, between amino acids possess leucine have within minerals calcium, phosphorus, iron, potassium, zinc, vitamin E and has complex B
The guinea pig (Cavia porcellus) is a rodent mammal native to the Andean region of South America and reaches a weight of 1 kg. Their meat is characterized by 20% protein and 7% fat. One way to cook it in water, then it can make casseroles or frying (this is a modification of the method of preparation of the guinea pig). The boiled water is rich in collagen you can take that broth with a few drops of lemon. The llama (Lama glama or auchenia llama) is the largest South American camelid, it is used as a producer of meat, wool and work. Meat has from 21.12 to 24.8% lipid and from 1.21 to 3.7%.The alpaca (Vicugna pacos) is another South American camelid that the Incas ate, their meat is from 18.93 to 19% protein, lipids of 1.06 and 7.2%
The potato (Solanum tuberosum) tubers have a 78% water and 18% of starch, contains vitamin C, riboflavin, thiamine and niacin, also has calcium, potassium, phosphorus and magnesium. There are several varieties and different colors such as white potatoes, yellow potatoes and purple potatoes.Maize (Zea mays) was also the main food of the Incas, protein is 9.4%, carbohydrates 74.2%, Fibre 1%, 4.7% lipids, has minerals such as potassium 287 mg, phosphorus 210 mg, 127 mg magnesium, manganese, calcium, zinc, selenium, also contains vitamins.I recommend that each region has its own plant and animal resources that serve food, which is why everyone should study and research of your ancestors who ate and try to follow the ancestral diet.In conclusion it is best to return to our ancestral diet to maintain our health and thus avoid suffering from diseases such as cardiovascular disease, obesity, diabetes, cancer, rheumatological, neurological, osteoporosis, food allergies, alzheimer among others.
